You will need:

2 cups bone broth (you can sub for vegetable broth)

1 garlic clove, minced

1 shallot, diced

4-6 shiitake mushrooms, sliced

1 tbsp coconut aminos
-
1 tbsp pine nuts, toasted

1/2 of a zucchini, spiralized

1/4 of a carrot, spiralized

Cilantro for garnish
To make:

In a pot over medium heat, add ghee, onions and garlic. Sauté until soft.

Add mushrooms and coconut aminos. Cook for 2-3 minutes or until mushrooms are soft.

Add broth and bring to a simmer.

In a bowl, add the zucchini and carrot noodles. Pour broth over and top with toasted pine nuts and cilantro.
