You will need:

  • 2 cups bone broth (you can sub for vegetable broth)

  • 1 garlic clove, minced

  • 1 shallot, diced

  • 4-6 shiitake mushrooms, sliced

  • 1 tbsp coconut aminos

  • 1 tbsp pine nuts, toasted

  • 1/2 of a zucchini, spiralized

  • 1/4 of a carrot, spiralized

  • Cilantro for garnish

To make:

  1. In a pot over medium heat, add ghee, onions and garlic. Sauté until soft.

  2. Add mushrooms and coconut aminos. Cook for 2-3 minutes or until mushrooms are soft.

  3. Add broth and bring to a simmer.

  4. In a bowl, add the zucchini and carrot noodles. Pour broth over and top with toasted pine nuts and cilantro.
